3rd Space Hospitality, the team behind Maison Close and Petite Disco, has opened Ayah, a Morocco-inspired restaurant on Houston Street in Mahattan, “Restaurant Hospitality” reported.
The kitchen is led by executive chef Geoffrey Lechantoux, who trained under chef Meryem Cherkaoui. Cherkaoui, a graduate of the Paul Bocuse Institute in [Paris?] and an ambassador for Moroccan gastronomy, built her reputation on her restaurant La Maison du Gourmet as well as television appearances on Top Chef France and MasterChef France.
Lechantoux is joined by chef Aïcha Sbaih, a French-born Moroccan who grew up with the traditions of Moroccan cuisine. Their partnership shapes a menu that blends classic and contemporary Moroccan flavors.
Moroccan restaurants have been popular in New York for decades. “We’re excited to bring Morocco to New York,” Lechantoux said in a statement. “Every dish and every detail have been crafted with authenticity to create an immersive dining experience that transports our guests to Morocco’s vibrant culinary world.”
Ayah’s menu includes chhiwates, bite-sized sweet or savory treats made with nuts, honey, vegetables, spices, or herbs. Other dishes include pastilla, a crispy philo pie filled with spiced chicken, almonds, and cinnamon. Tagines and couscous offer slow-cooked stews paired with semolina grains, vegetables, and broth. Whole fish is deboned and served tableside in front of guests.
The restaurant’s bar designed by Adrien Lefort features cocktails such as The Dellah, made with citron-flavored vodka, jasmine tea, watermelon, mint, lime juice, and champagne.
Ayah’s decor blends Moroccan crafts with New York sensibility. 3rd Space Hospitality worked with DMDesigns to furnish the space with Moroccan artisan work, including handcrafted windows, custom tables, and velvet curtains.
Rich fabrics, carved tables, gold-accented mirrors, and custom lighting illuminate the restaurant.
With three dining rooms, a central bar, and banquet tables for larger groups, the space moves between intimate dinners and lively celebrations.
